When Mom talks? We Listen

My Mom called tonight. Moms are good people when it comes to talking. They have information we need. Tonight Mom's information was about Soup. She and Dad have been eating this soup since Christmas and enjoying it. I'm not sure I could do it everyday but we shall see?



2 cups of pot or pearl barley(soaked)
2TSP olive oil
2 cups of chopped onion
6 Carrots cut in ¼ inch dice
2 10oz containers of fresh  mushrooms.
4 cloves garlic minced
8 cups of sodium reduced beef orvegetable broth.
1 Large Can of unsalted diced tomatoes(or 2of the 14oz)
2 Tsp Tomato paste
2tsp of Worcestershire sauce
1tsp Balsamic vinegar
1 TSP dried thyme
1tsp salt
¼ tsp black pepper
6 cup baby spinach
Or finely chopped Kale
Cook the soaked barley (1/2 hour) while coking, olive oil in the stock pot heat add onion, carrots saute 5minutes. Add mushrooms, add garlic 1minutes, add broth, add until you get to the bottom until greens
Bring to low boil, lower heat, simmer 30minutes add green last
6gm fat, no cholesterol. 24 cups of soup.  Eat at lunch. Lasts 1month drop 2inches of belly fat.<--- I wonder? but really I'm looking for something different to add to my Day.
